CHAGRIN FALLS, Ohio – It’s warm, it’s crunchy and it’s ‘oh so good’! Hungry Bee Catering owner Kimberly McCune Gibson heard that Fox 8’s Kristi Capel made a New Year’s Resolution to become a better cook. Chef Gibson gave Kristi a cooking lesson as she showed her how to make a recipe that’s simple on ingredients, but huge on flavor. Chef Gibson says this recipe is perfect not only for a fast dinner, but also for showers and last minute company.

The Perfect Warm Chicken Salad
Serves 8
- 2 cups cooked chicken breast meat, cubed
- 1 cup diced celery
- 1/2 cup sliced water chestnuts
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons fresh lemon juice
- 1 cup mayonnaise
- 1 cup grated sharp White Cheddar
- 1 tsp chopped fresh thyme
- 2/3 cup crushed potato chips
Directions
Preheat oven to 350 degrees. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.
In a large mixing bowl combine the chicken, celery, water chestnuts, salt, pepper, lemon juice, mayonnaise, thyme, and cheese. Place the mixture in the prepared baking dish. Spread the crushed potato chips on top. Bake for 20 minutes, until chips are toasty & salad is bubbly!!!
